We would like to be able to see the item number on the bookings report in SA-A. Can it be added or an RTM report created?

Yes in EVO, Only by ISTech in DBA.

SA-A is currently a text report so even in Evo, users can't change it. Further, it is only looking at invoice or sales order totals, not the line item detail. There is one entry per order, not one per line. SO-O-J could be tweaked to get what you want.
